Pistachio Chocolate Berry Dessert


This frozen dessert is simply HEAVENLY!  My sweetheart just had a birthday so I created this treat for him.  He loves everything pistachio.  I on the other like them but do not share in his obsession.  After eating this dessert I may have to join him in his Pistachio Passion!

Berry Layer
12 oz. frozen mixed berries
3/4 cup sugar
2 Tablespoons cornstarch
1/4 cup cold water

Ingredients
1 cup salted pistachios shelled and chopped
26 OREO cookies, crushed

2 small boxes (4-serving box) instant pistachio pudding
1 small box (4-serving box) instant chocolate pudding
5 1/4 cups cold milk, fat free half and half, or a mixture; divided
1- 8 oz. container whipped topping, thawed

In a small cup combine the cornstarch and cold water; set aside.
In a small sauce pan stir the berries on high heat until they begin to defrost.  Add the sugar and stir continuously until it reaches a boil. Add the cornstarch mixture and continue to stir until it thickens.  Remove from the heat and allow to cool to room temperature.

In a medium bowl combine both chocolate pudding packages with 3 1/2 cups cold milk, half and half, or a combination.  If you are using half and half you will want to use electric beaters to avoid clumps. Mix thoroughly and then fold in 2/3 of the whipped topping; set aside.

Grease the bottom of a 9 inch springform pan.  Layer your dessert in the following order from bottom to top as indicated:


 Freeze for 4-6 hours or until solid.  Once it has frozen cover your dessert with plastic wrap.  The nuts will taste their best the first 1-2 days.  They will begin to soften as they age.  Regardless, it is still fabulous!
