Ham/Bacon Cabbage Quiche
with PIZAZZ!

Ham/Bacon Cabbage Quiche with Pizazz

1 cup shredded cheddar cheese
3/4 cup shredded cabbage
1/2 cup shredded carrot
1/3 cup cooked and chopped bacon or ham
1/3 cup chopped onions or 2 T dried onions
1 1/2 tablespoons flour
1/4 teaspoon each salt, pepper, and garlic powder
Pizazz- serve with Hot Sriracha (spicy red pepper sauce)

4 eggs
1 1/2 cup fat free half and half or milk

Preheat oven to 350° F.  Grease a 2 quart square baking dish; set aside.  In a large bowl combine the first seven ingredients.  Add the eggs and half and half and mix thoroughly.  Pour into prepared pan.  Bake at 350° for 35-40 minutes or until a knife, inserted, comes out clean.  Let sit for 10 minutes.  Then, enjoy immediately!

Yields: 4 servings (adult sized)

All of my kids LOVE this dish!!!  The cabbage really takes it to a fun new level while adding extra nutrients.  This dish pairs nicely with garlic toast, fruit, and steamed vegetables.
