Vanilla Peach Stuffed Wafflewich

Vanilla Peach Stuffed French Wafflewich

8 slices of white bread
1 small peach, sliced
Non-stick cooking spray for the waffle iron
Butter for the skillet

Vanilla Peach Sauce
1 small peach (~2 ¾ inches in diameter)
3 tablespoons maple syrup
½ teaspoon vanilla
½ teaspoon lemon juice
½ cup whipped topping

Nut Filling
½ cup chopped nuts
2 tablespoons butter
¼ cup brown sugar
1 teaspoon cinnamon

Egg Mixture
1 egg
½ cup milk

In a blender combine the small peach, maple syrup, vanilla, and lemon juice and process until smooth.  Fold in the whipped topping and place in the fridge.

Preheat your waffle maker and a large skillet.  In a small bowl, combine the nuts, butter, sugar, and cinnamon with a fork; set aside.  Grease your waffle maker with non-stick cooking spray.  Press each piece of bread in your waffle maker until toasted; set aside and repeat with remaining bread.  

In a small bowl combine the egg and milk with a wire whisk; set aside.  Lay four waffle pressed slices of bread on the counter and evenly cover with the nut filling.  Top with remaining pressed bread.  Carefully dip both sides of each sandwich in the egg mixture and place in a butter greased skillet.  Cook sandwich on each side until lightly browned.  Serve immediately with Vanilla Peach Sauce and fresh peaches.  Created by
