Banana Fosters Ice Cream

1 tablespoon rum extract *optional
2 tablespoons butter
1/3 cup brown sugar
2 cups bananas, sliced in 1/2 inch segments
1/4 cup cinnamon baking chips or 3/4- 1 teaspoon cinnamon
2 1/2 cups vanilla ice cream, softened

In a large skillet add the rum extract and heat until it approaches a simmer.  Carefully ignite with a match to allow the alcohol to burn out.  Stir in the butter and brown sugar until melted.  Add the bananas and gently stir for 2-3 minutes or until heated through.  Remove from heat.  Stir in the cinnamon baking chips or cinnamon and pour into a blender.  Add the ice cream and mix until smooth.  Pour mixture into a freezer safe container and freeze for 3-4 hours or until solid.  Serve with shortbread cookies.

*If you like milder flavors dilute the mixture by adding additional vanilla ice cream.  My spouse loves Banana Fosters and therefore loved this recipe as is.  I created this ice cream with him in mind.  Love you "Other Half"!
